Buckwheat Pancakes

Ingredients:

3/4 cup of buckwheat flour

3/4 cup of plain flour of choice

1 free range egg

1 1/4 cup of milk of choice

1 tsp vanilla essence

1/2 teaspoon cinnamon

1/2 tsp baking powder

Method:

Whisk all ingredients together until smooth batter forms.

Fry in batches, flipping when holes form through the pancake. About 1-2 mins each side.

Stack pancakes and add toppings of choice.

Great options include:

Yoghurt

Fresh or stewed fruit

Peanut butter and/or jam

Maple syrup
