Kitchari

Ingredients:

1 tsp mustard seeds

1 tsp turmeric

1/2 tsp coriander seeds

1/2 tsp cumin seeds

1/4 tsp black pepper

1 cup white rice

1 cup red lentils

5-6 garlic cloves

1 inch ginger

1 white onion

1 litre of vegetable stock

Fresh coriander to serve

Method:

Fry onion, garlic and ginger together on low-medium heat. Add spices and fry till fragrant. Stir in rice, lentils and stock. Simmer for 15-20 mins till creamy and lentils and rice are tender.

Serve with fresh coriander.
