Lunch Pasta salad

1 can black beans (rinsed)

1 can corn (rinsed)

1/2 cucumber

1 punnet cherry tomatoes 

1 small block halumi

1/4 cup pepitas

1/4 cup hemp seeds

1/2 cup mayonnaise

1/2 jar of pesto

Method:

Open and rinse canned corn and beans. Slice and fry halumi then chop into similar sized pieces. Dice other ingredients to match and combine in a bowl. Mix mayo and pesto in small bowl and set aside.

Cook pasta of choice as per directions and cool under running water (or combine straight away if wanting a warm salad). Drizzle over sauce and combine. Store in an airtight container and enjoy over the next few days.
