Veggie Pizza

Ingredients:

1-2 store bought pizza bases

2 tbls tomato paste

Fresh or dried herbs

1 bunch of broccolini

1/4 a butternut pumpkin, pre cooked in the oven ideally

2-4 button mushrooms

1 red capsicum

1-2 tbls sauerkraut

1 avocado

1 cup cheddar/mozzarella

1 small chunk of feta

Method:

Spread 1 tbls of tomato paste on each pizza base. Arrange chopped ingredients evenly over sauce. Chop pumpkin very finely or pan fry for a couple of minutes if desiring it tender. Cover with 1/2 cup cheese per pizza. Sprinkle with broken up feta. Bake for 10-15 minutes at 180 degrees. Add fresh sauerkraut and avocado once sliced.
