Beef and Bean Stew

Speaking of comfort foods, boom! this beef and bean soup is a flavour fest of warming spices, tender meat and comforting beans.

Ingredients: 500gms diced grass fed beef 1 onion 1/2 head garlic Thumb sized ginger 1 tsp cumin 1/2 tsp chilli flakes 1 tsp turmeric 2 tbs tomato paste 2 tbs of honey 1 litre stock 1 cup of dry bean mix

Optional: Fresh herbs to serve, I used dill.

Method: Finely chop onion and garlic and grate ginger. Combine spices together in a small bowl. In a heavy bottom pan, fry beef till browned, add in onion, garlic and ginger and continue frying till onion is translucent. Add in dry spices and heat till fragrant. Add in tomato paste, honey and a splash of stock if necessary to deglaze. Use a spatula to scrape the flavour base from the bottom. Add rest of stock and dry beans and bring to a simmer for 1-1.5 hours.

Serve hot with fresh herbs
