Prawn Pasta
This was a super quick prawn and caper pasta that packs flavour and pulls together in 10 mins. Ingredients: (serves one) 8 prawns 1 tbs capers 3 garlic cloves Juice and zest of half a lemon 1/2 cup of pasta water 1 handful of fresh basil or parsley 1/4 pack pasta Butter and olive oil for cooking
Method: Place pasta on to cook in boiling seasoned water. In a hot pan, fry off garlic, capers and prawns in a mix of oil and butter till prawns are nearly pink. Add lemon zest, juice and pasta water. Simmer down, add basil and cooked pasta. Serve with more fresh basil and lemon juice
