Chicken Three Ways

Chicken for all three recipes:

100g Raw Weight Chicken thigh or breast per person (fat removed, chopped into strips)

Chicken Thunder Bird Magic Rub (Foodland)

Olive oil

Air Fryer

Mix olive oil and seasoning into chicken to coat and cover the longer it marinates the better

Cook chicken in air fryer on poultry setting till cooked through.

Use chicken in either one of three recipes below:

Mexican Rice Bowl: 1 cup cooked rice per bowl, dollop Medium Salsa, crumble of Feta, handful chopped Cucumber, handful Corn, handful chopped Green Capsicum, Handful coriander, spoonful of greek yoghurt, squirt of lime on top. Enjoy

Greek Chicken Yiros Wraps: 1-2 wholegrain Wraps per person, Portion of chicken above, handful chopped Cucumber, handful of chopped Tomato, Fried Red Onion, 1-2 tbspn Store bought Tzatziki, crumble of Feta. Enjoy

Green Chicken Salad: Handful of chopped lettuce of choice, handful of chopped cucumber, handful basil, handful of roasted almonds, portion of above chicken, Dressing: To make the dressing, mix 1 tablespoons fat-free natural yoghurt, 1.5 tablespoons mayonnaise, 1 lemon , juice and zest, salt and pepper in a large bowl. Mix well and serve. (As a complete meal, serve this with wholegrain crackers Eg 4-6 Vitawheat, or 1 cup cooked rice or quinoa per person).
