Veggie Dumplings

Ingredients

1 block of firm tofu

1.5 cups of finely chopped mushrooms, grated carrot & red cabbage

3 tbs soy sauce

1 tsp chopped garlic, ginger and chilli- I used a jar mix for this 1

1/2 bunch of fresh coriander- chopped

1 packet of wonton wrappers

Method

In a big bowl mix together tofu, vegetables, soy sauce and garlic blend. Squeeze together till well combined. On a clean bench, working in batches, lay out wonton wrappers, and place a small tables poon worth of mixture in the middle. With damp fingers moisten the edges along one half of the wrapper. Fold in half so the edges meet to form a triangle, gently squeeze out air and stick together. In a hot pan fry wantons in a little oil to crisp the bottom then pour in half a cup of water and place on lid. Fry for 3-5 mins till water drying out and wontons heated through. Serve with sesame seeds, fresh coriander, and chilli oil.
