Easy homemade Curry
Easy homemade curry:
Ingredients:
1 onion
1/2 head garlic
1 thumb of ginger
1 tsp Garam masala
1 tsp turmeric
1 tsp mustard seeds
1/2 tsp ground coriander
1/2 tsp ground cumin
Salt and pepper to taste
3 cups of mixed chopped vegetables- potatoes, sweet potatoes, pumpkin
1 cup red lentils
1 can whole tomatoes
1 can coconut cream
3/4 litre vegetable stock
1 cup rice cooked as per packet instructions.
Method:
In choice of oil, fry finely chopped onion, garlic and ginger till softened.
Add in dried spices and fry till fragrant. Deglaze pan with coconut cream, tomatoes and stock. Stir in vegetables and lentils. Simmer till vegetables are tender and lentils are creamy. About 15-20 mins.
Serve with a side of basmati rice. Top with avocado, sauerkraut and papadums.
