Gingerbread Loaf

Gingerbread loaf:

Ingredients:

• ½ cup unsalted butter room temperature

• ½ cup brown sugar

• 2 large eggs room temperature

• 1 teaspoon vanilla extract

• ½ cup molasses

• ½ cup hot water

• 2 cups all-purpose flour

• 1 teaspoon baking soda

• 2 teaspoons ground ginger

• 2 teaspoons ground cinnamon

• ½ teaspoon ground cloves

• ½ teaspoon salt

• 1 250gm packet of cream cheese at room temp

• 4 tbs icing sugar

Method:

Cream together sugar and butter together. Add in eggs and vanilla and mix till combined.

In a seperate bowl combine hot water and molasses.

In a large bowl combine all dry ingredients. To the butter mix, add half the dry ingredients and combine till mostly incorporated. Add half the molasses mix till combined. Repeat with the rest of the dry ingredients, then molasses mix.

Pour into a loaf or cake pan and bake for 45-55 mins covered in foil. Uncovering for the last 15 mins. It’s done when I toothpick comes out clean. Wait till cool then remove from pan.

Combine cream cheese and icing sugar. Smooth over top of cake and serve.
