French Lentil Stew

Ingredients:

1 onion

6 cloves of garlic

1/2 inch of ginger

3 cups of assorted vegetables diced- carrots, celery, broccoli, potato are all great options.

1 cup dry French lentils

1 tbsp tomato paste

1 tsp soy

1 tsp worcester sauce

1 tsp paprika

1 tsp dried basil

1 tsp dried thyme

1/2 tsp turmeric

1 litre vegetable stock

Salt and pepper to taste

Method:

Fry onion, garlic and ginger together till soft. Add tomato paste, Worcester sauce, soy and seasonings. Fry till fragrant. Stir in vegetables and lentils followed by stock. Let simmer for 25-30 mins or until lentils are tender. Serve with fresh bread and coriander.

Alternatively add all ingredients into a slow cooker and cook on low for 6 hours or high for 4 hours.
