Green Soup

Ingredients:

1 zucchini

1 head of broccoli

1-2 medium potatoes

1 large handful of spinach

1 onion

1/2 head garlic

1 nub ginger

Sprigs of parsley

5 sprigs of thyme

5 springs oregano

Salt and pepper to taste

1/2 litre stock

1 can coconut cream

To garnish:

Pepitas, sesame seeds, and can cannoli beans (drained and fried till crispy)

Method:

Roughly chop and peel onion, garlic and ginger. Fry in a small amount of olive oil. While frying roughly chop veg and add to pan. Add stock and simmer till all veg is tender. Shred fresh herbs (if using dried add with coconut cream.)

Add in cream, herbs, and spinach. Blend till smooth.

Top with seeds and beans (beans can also be blended into soup.)
