Two Minute Noodles

Ingredients:

1 carrot

1 small cucumber

1 small handful of spinach

1 button mushroom

1 packet 2 minute noodles (I used the trident laksa soup mix)

1 hard boiled egg or chopped tofu

Some fun extras could be fresh lime, microgreens and sesame seeds.

Method:

Prepare vegetables by finely chopping or using a potato peeler to make thin strips. Assemble in a bowl. Cook noodles according to packet instructions. Add to vegetables. Adding a protein such as a boiled egg or if time poor chopped tofu will make this more filling!
