Kale and Quinoa Salad with Orange Ginger Dressing.

Ingredients:

2 cups of finely chopped kale

1 cup chopped cucumber

1 cup chopped oranges

1 cup cooked quinoa

1/2 cup cherry tomatoes

1/2 cup feta

1/2 cup microgreens (if accessible)

Dressing:

Juice of one orange

1 tbsp apple cider vinegar

1 tsp finely grated ginger

1 tsp seeded mustard

1/2 tsp dried basil

Method:

Layer or combine ingredients with the dressing and serve warm or cold depending on whether you cool the quinoa before serving
