Lentil, mushroom and walnut sausage rolls

Ingredients-

3 sheets puff pastry

3 carrots

3 sticks celery

6-8 button mushrooms

1 onion

4 garlic cloves

1 can lentils

1/2 cup walnuts, finely chopped

1/2 cup breadcrumbs

1 tbl tomato paste

5-6 sprigs fresh (or equivalent dried) thyme

1 tsp Worcestershire sauce

1/2-1 cup stock

To top: sesame seeds, milk for brushing.

Salt and pepper to taste

Method:

Finely dice all vegetable ingredients and drain and rinse lentils.

Fry off onion and garlic. Add in chopped vegetables and fry for a few minutes. Add in tomato paste, Worcestershire sauce, thyme, and 1/2 cup stock (adding more later if going dry) Simmer for 10-15 mins till vegetables are tender and stock has evaporated.

Let cool and stir in lentils, walnuts and breadcrumbs.

On defrosted puff pastry create a log of mixture with hands close to one end of the sheet. Roll together firmly and cut into slices.

Place onto baking paper lined tray. Coat with milk with a pastry brush and top with sesame seeds.

Bake for 15-20 mins or till golden, puffed and bubbling.
