Mattea’s Vegetarian BBQ Tofu Pizza

This is a substitution for a Ham and pineapple pizza or BBQ chicken pizza. It really hit the spot!

SERVES 2

Ingredients
Pre made pizza base from the supermarket - Tip Top 12inch Pizza based was used here, but there are lots of other options
Mutti Pizza Sauce (or any other tomato passata)
Berenberg BBQ sauce
Sriracha
Fresh or canned Pineapple
1 Avocado, sliced
200g Tofu, sliced
1 Red onion, sliced
1tbsp Olive oil (for frying onion)
Shredded Mozzarella or vegan shredded cheese if vegan

Method
1. Preheat the oven to 180 degrees.
2. Fry the red onion in olive oil in a fry pan on the stove till soft and caramelised
3. Add the pizza bases to a pizza tray.
4. Top the pizza base with tomato passata sauce (enough to cover), BBQ sauce and Sriracha.
5. Cover with cheese, top with pineapple, sliced tofu then avocado and fried red onion.
6. Bake for 15 mins or until cheese and tofu is golden
