Mushroom and Leek Spaghetti

This is such a great way to get flavour into pasta and yet keep it easy, easy, easy!! @nutraorganics originally shared this recipe but with white wine instead of the pasta water. It was a delicious quick lunch!

Ingredients:

6-8 button mushrooms

1/2 leek

2 cloves of garlic

1/2 packet of pasta of choice

A few sprigs of sage and thyme (can replace with 1/2 tsp of dried each)

1 tbs bone broth concentrate

1/2 cup pasta water

2 heaped tbs Parmesan

Method:

In a large pot bring water to boil and cook pasta according to packet instructions. Finely dice mushrooms, leek and garlic and fry in olive oil and butter till softened. Add in pasta water, fresh (or dried) herbs, broth concentrate, and Parmesan. Stir gently over heat to combine and add pasta. Serve with some wilted greens and fresh avocado.
