Rainbow Sushi

Ingredients:

Red capsicum

Grated carrots

Cucumber

Red cabbage

Fried halumi

Tofu- fry in 1 tbsp sweet chilli sauce and 3 tbsp soy sauce.

1.5 cups sushi rice cooked in 2.5 cups water. (Arborio rice works too)

5 sheets of nori paper

Mayonnaise of choice

Method:

Thinly slice all ingredients. Thinly layer rice onto 3/4 of a nori sheet, shiny side out leaving a small space at top for sticking closed. Layer on ingredients. Dab water on exposed sheet and roll tightly closed sealing at damp end. Slice into segments and serve with sesame seeds and soy sauce.
