Spice roasted carrot salad with hemp and dill dressing

Ingredients:

Lettuce

Cherry tomatoes

Cucumber

Microgreens

3 medium carrots

1 bunch of asparagus

Sauerkraut

Pepitas

Sesame seeds

1/2 tsp cumin seeds

1/2 tsp coriander seeds

Oil for baking

Dressing:

1/4 cup of hemp seeds

1 tsp maple syrup

1/3 cup plant milk

1 garlic clove

1/2 tsp dried basil

4 springs of dill

Method:

Coat chopped carrots in 2 tablespoon of oil and spices and place in oven at 180degrees for 25-30 mins. Sauté chopped asparagus in water or oil. Arrange chopped salad ingredients with carrots and asparagus.

Place all dressing ingredients in a blender and process till smooth. Top salad with dressing, sauerkraut, pepitas and sesame seeds.
