VEGGIE FRIED RICE
Ingredients:
2 medium carrots
1/4 red or green cabbage
1 medium red capsicum
1 head of broccoli (stems included)
1/2 pineapple
5 cloves of garlic
One nub of ginger
2 cups dry brown rice, cooked and cooled.
1/4 cup soy sauce
1 tsp sesame oil
Method:
Finely chop all ingredients and throw into a hot pan. Fry till heated through, make a well and add ginger and garlic and fry for further minute. Add cooked brown rice, soy and sesame oil and stir to combine.
Top with any or all of the following: sesame seeds, peanuts, sweet chilli sauce and fresh coriander.
