Vibrant Open Toast

Ingredients:

2 slices of toasted sourdough

2 heaped tbs ricotta (I used @laveracheese)

2-4 slices salami (Dorsogna Nitrate Free Hungarian Salami is a good option)

1 fresh fig

1/2 punnet cherry tomatoes

Balsamic glaze and fresh basil to top

Method:

Toast bread in a hot pan. Transfer to plate then toast and burst cherry tomatoes in the pan.

Layer salami, ricotta, figs and tomatoes in any order or combination desired. Top with fresh herbs and balsamic glaze.
