Zucchini Corn Fritters
Ingredients:
2 zucchini's
1 can of corn
200gm cottage cheese- I used a cheese and chives one
6 eggs
1 cup flour
Pinch baking powder
Method: Grate zucchini and sprinkle with salt. Squeeze out any excess liquid. Add to a bowl with the rest of the ingredients and stir well to combine. Add a couple of tbs to each fritter and cook in a hot pan with a little oil until crispy and golden each side.
