Buffalo Cauliflower

Ingredients:

1 head cauliflower

3/4 cup of plain flour

1 cup of water

1 tsp of dried basil

Salt and pepper to taste

Bread crumbs

Olive oil for baking

1 bottle of “franks” hot sauce

1 tablespoon of butter

Method:

Preheat oven to 180degrees.

Break up cauli into florets.

Create a batter with flour, water, salt, pepper and basil. Mix together thoroughly. You want it be thick enough to coat the cauli but thin enough to shake excess off.

In batches dredge cauli in batter, tap off excess and coat with crumbs. A fork makes this bit much easier to avoid messy fingers.

Place crumbed pieces on a baking tray lined with parchment and lightly sprinkle with oil.

Bake for 15-20 mins or until golden.

While baking, mix together melted butter and hot sauce. While cauli is still hot toss in sauce or pour over.

Serve with fresh coriander and/or sesame seeds.
