Sarah’s High Energy Biscuits

I keep these in the freezer for a quick snack on the go! Perfect for busy bodies, especially breastfeeding mums. High in fibre, healthy fats, protein, low added sugar, vegan and really delicious! Vegan option- substitute honey for agave syrup.

Ingredients

10g chia seeds

10 pitted dates, finely chopped

5 tbsp boiled water

40 g pumpkin seeds/pepitas, chopped

2 cup whole rolled oats, pre-blended in a blender for 15 seconds, or quick oats will do

40g sunflower seeds, chopped

10g Hemp seeds

2 tbsp Natural honey or agave syrup (vegan option)

2 tbsp hulled tahini

10g LSA

20g cacoa nibs

1t ground cardamom

1t ground cinnamon

1t ground ginger

1T nutritional yeast

Method:

In a large bowl, soak chia and dates in the boiling water for a few minutes while you get the other ingredients together and pre-heat your oven to 180 degrees.

Add all the other ingredients, and mix thoroughly. Roll into palm sized balls, and flatten on to a baking tray lined with baking paper.

Bake for 12-15 minutes or until golden.
