Casey's Cocoa, Dates & Fig Truffles

Ingredients
150g medjool dates, pitted
150g dried figs, stems removed and chopped
3/4 cup pecans
1/2 cup almond meal
1/4 cup raw cacao powder
2 teaspoons vanilla extract

Method:
1. Place pecans in a food processor and grind until roughly chopped.
2. Add the remaining ingredients and process until the mixture is well combined and sticking together.
3. Roll heaped teaspoons of mixture into approximately 25 balls.
4. Store the truffles in an airtight container in the fridge until ready to serve.
