Sardines on Toast

Let’s address canned tunas distant neglected cousin. Sardines.

Still delicious, still nutritious, with healthy fats, protein and a good source of calcium in those bones. A great way to mix up our fish intake.

Ingredients: 2 slices bread of choice 1 can of wild caught sardines 1 large tomato Fresh dill (I’d suggest fresh herbs as it really livens this) 1/4 tub cottage cheese

Method: Toast bread and layer on cottage cheese, sardines and freshly sliced tomato. Sprinkle with dill and pepper. You can buy boned and skinned sardines, however both are edible (and a source of calcium). However if you’re not prone to surprise textures I just split the fish in half and extracted the spines easily.
