Rainbow salad with honey mustard dressing
Ingredients:
Salad:
1 cup dry quinoa cooked in 2 cups of water
1/2 cup red capsicum
1/2 cup carrot
1/2 cup of pumpkin (baked or fried in a little oil in a pan)
1/2 cup celery
1/2 cup purple sauerkraut
1/2 cup cooked chickpeas
Dressing:
4 tablespoons mayonnaise
1 teaspoon seeded mustard
1 teaspoon dijion mustard
1 teaspoon apple cider vinegar
1 teaspoon honey or maple syrup
Method:
Stir all ingredients together for dressing. Layer ingredients, pour over dressing and stir to combine. If desiring a warm salad let quinoa cool slightly before mixing together.
